A very delicate, clean, and juicy coffee. Notes of blackberry jam, dried plum, honey, and blueberries in fragrance and a floral touch when in contact with water, which will remain in the mouth. Mellow acidity and a pleasant and clean aftertaste that reminds us of honey.

Story

Felino Sánchez Bustamante moved with his family to Finca Manacaraco from northern Peru in the early 2000s. Since they arrived at the farm, they heard the sound of a bird and fell in love with its melody. They decided to call the farm after this bird, Manacaraco, in order to share the story with those who ask them about the origin of the name they gave to their property. The Bustamante family dedicates great effort to maintaining and improving the quality of their coffee, planting fruit trees alongside the coffee trees, and diversifying the processing methods they use. 

The cherries from this batch have been manually selected and then pulped. The coffee is then anaerobically fermented in hermetically sealed containers for 42 hours and then washed. It is then dried on raised beds for 15 to 20 days, stirring regularly to achieve uniform drying.

Brewing Instructions

All our espresso coffees can be prepared in your home Moka / Italian.

If you have an espresso machine, we recommend using 19 grams of coffee to extract 41 grams in a cup in 31 seconds. We use a temperature of 199.4ºF and the help of 8 bars of pressure.

Please bear in mind that it can change depending on the coffee machine you are working with, the grinder, and the water you are using.
