A clean and tiled coffee where we find notes of cocoa, watermelon liqueur, blood orange, and muscovado sugar in fragrance and aroma. In the mouth we enjoy a juicy body, cherry liqueur, molasses, figs, ripe banana, and a prolonged aftertaste of cocoa powder. A coffee that we love to enjoy alone or with milk.

Story

For this coffee, a batch selection process has been carried out, giving priority to the location of the coffee tree within the farm, seeking that it meets the temperature and humidity requirements for the development of sugars. After exhaustive harvesting, a floating process is carried out to remove the less dense and therefore immature cherries. Next, anaerobic fermentation of 16 hours is carried out in tanks, using an inoculum prepared with the fermentation of the previous crops of the farm. The coffee mass is transferred to the greenhouse and put to dry in beds for 4 days to drain much of the water and give way to the last phase of juice exchange. Finally, it is finished drying with a silo airing process for 2 days.

Brewing Instructions

All our espresso coffees can be prepared in your home Moka / Italian.

If you have an espresso machine, we recommend using 19 grams of coffee to extract 42 grams in a cup in 33 seconds. We use a temperature of 199.4ºF and the help of 8 bars of pressure.

Please bear in mind that it can change depending on the coffee machine you are working with, the grinder and the water you are using.
