The Nemba washing station is located in Kayanza province. There are different points within the area where cherries are harvested from the more than 3,000 small growers in Kayanza. At each collection point, there is an agronomist in charge of teaching good cultivation, care, and harvesting practices to each of the producer families. The washing station also provides coffee producers with organic fertilizers derived from the compost of the coffee cherry.
The process of this coffee consists of the selection of the ripest cherries by means of a sieve in water. The densest cherries, which are those that do not float, are pulped in a maximum time of 6 hours after being harvested. Afterwards, the coffee is drily fermented for 12 hours and immersed and washed with clean mountain water for another 12 to 24 hours. Finally, the parchment coffee is dried in African beds for 2 to 3 weeks.
All our espresso coffees can be prepared in your home Moka / Italian.
If you have an espresso machine, we recommend using 19 grams of coffee to extract 41 grams in a cup in 31 seconds. We use a temperature of 199.4ºF and the help of 8 bars of pressure.
