One of Nomad’s favorite filter coffees. This coffee from the Gahahe wash station gives us very sweet and floral notes in cups. In fragrance, it reminds us of the orange blossom, once in contact with water the citrus notes of mandarin and raspberry stand out. Finally, it leaves us a sweet aftertaste in the mouth that reminds us of milk chocolate.

The Gahahe washing station is located in Kayanza province at 1,800 meters above sea level. During the harvest season, all coffee is selectively hand-picked. The process of this coffee consists of a previous classification where the immature cherries are separated from the ripe ones. After this classification, the cherry is pulped within 6 hours of delivery. The coffee is then dry fermented for up to 12 hours and washed in clean mountain water for 12 to 24 hours. The parchment is soaked in water for an additional 15 hours before drying on raised beds for 2 to 3 weeks.
We use 15 grams of medium ground coffee and 260 grams of water at a temperature of 204.8ºF. We pour the water into 2 pours. One of 50 grams, we wait 30 seconds and then we pour the rest of the water until we reach 260 grams. The total infusion time should be between 2 and a half minutes and 3 minutes.
Please bear in mind that it can change depending on the coffee machine you are working with, the grinder, and the water you are using.
